Description:
Reporting to the Camp Boss / Chief Cook, accountabilities include:
• Prepares, produces and serves meals, bakery and confectionery items within agreed quality standards, inventory levels, budgetary targets and contract specifications
• Assists in preparation and monitoring of menus for nutritional balance
• Conforms with all Occupational, Health, Safety and Hygiene standards
• Participates in all training requirements to ensure duties are carried out in a competent manner
• Adheres to all work and cleaning duties as defined
• Ensures effective equipment operation and reports defects to Catering/Accommodations Coordinator
• Maintains effective communication with personnel and customers
• Supports Stewards
• Performs other duties as required.
Minimum Competencies:
(Skills required to accomplish this role effectively)
• Marine Cooking Certificate with Baker’s Production papers
• 5 – 10 years’ experience in the preparation, production and service of meals (preferably in an offshore/remote location)
• Knowledge of professional food preparation and service principles
• Ability to use specialized food preparation equipment
• Knowledge of regulatory and food service industry codes and standards
• Ability to work under pressure in an environment which expects the highest level of quality & customer service
• Ability to meet physical demands of the role including continual standing, walking, bending and lifting of kitchen equipment and food supplies and repetitive task performance
• Willingness to take initiative and suggest improvements in services
• Effective communication skills (written, oral and computer)
• Leadership and teamwork skills/behaviors which support team based organization
• Ability to understand and react with diverse groups and operations
• Ability to recognize and resolve conflict
• Basic Survival Training Certification
• English language skills.
